About The Moore The Moore is a landmark destination in the Miami Design District, comprised of a private members club, hotel and a collection of restaurants, retail, exhibition, event and office space. Housed in the District’s circa‑1922 Moore building, the reimagined, nearly 90,000‑square‑foot space integrates two, four‑story structures located at the intersection of NE 40th Street and NE 2nd Avenue, and includes. Position Overview We’re seeking a passionate, skilled, and experienced Head Sushi Chef to lead our sushi kitchen and deliver an exceptional dining experience rooted in quality, tradition, and creativity. This is an exciting opportunity for a chef who takes pride in their craft, thrives in a leadership role, and is ready to take our sushi offerings to the next level. Position Responsibilities Lead daily sushi operations including preparation, presentation, and service. Ensure the highest standards of food safety, cleanliness, and hygiene. Oversee and train a team of sushi chefs and kitchen staff. Develop and innovate sushi menu items that reflect both tradition and creativity. Source and inspect ingredients for freshness and quality. Manage inventory, control food costs, and maintain kitchen efficiency. Interact with guests (as needed), ensuring a memorable and personalized dining experience. Prepare and assemble a variety of sushi dishes, including nigiri, sashimi, maki rolls, and specialty rolls. Ensure the proper handling and storage of ingredients to maintain freshness and food safety. Follow traditional sushi preparation techniques and demonstrate expertise in knife skills. Stay informed about current food trends and culinary developments related to sushi and Japanese cuisine. Provide guidance and mentorship to the Sushi team. Uphold a positive and professional demeanor while working in a fast‑paced kitchen environment. Qualifications Minimum 5 years of experience in sushi preparation, with at least 2 years in a leadership role. Deep knowledge of sushi techniques, Japanese cuisine, and knife skills. Strong leadership and team management abilities. High attention to detail and commitment to quality. Familiarity with kitchen inventory, ordering, and food cost control. Valid food handler’s certification (or ability to obtain). Proven experience as a sushi chef or in a similar role within a reputable sushi restaurant. Strong knowledge of various types of fish, seafood, and ingredients used in sushi preparation. Proficiency in traditional sushi techniques, including knife skills and rice preparation. Creativity in developing new sushi dishes while respecting traditional flavors and techniques. Attention to detail and the ability to create visually appealing presentations. Strong communication and teamwork skills to collaborate with kitchen staff and interact with customers. Knowledge of food safety and sanitation regulations. Ability to work in a fast‑paced environment and manage multiple orders simultaneously. Willingness to continuously learn and adapt to new culinary trends and techniques. Physical Requirements Ability to stand for extended periods. Manual dexterity for precise knife work and assembling delicate sushi rolls.
